Selecting a pineapple: You can buy a green one and then wait for it to ripen or you can but a ripe one. A ripe pineapple will have a yellowish colour and smell sweet. If the pineapple is ripe you will be able to pull out the leaves in the crown. If the pineapple is all green and you can’t pull out the leaves of the crown then you will have to let it sit on your counter until it is ripe. Be very careful that it doesn’t get too ripe or it will attract a lot of fruit flies in your kitchen.
Preparing: Wash the outside skin of your pineapple very well. You will need a flat cutting surface like a cutting board and a large, sharp knife.
